  • 2 8 ounce portions Flatbread Dough (see recipe)
  • 4 ounce fresh mozzarella cheese or 4 ounces feta cheese, crumbled
  • 2 tablespoon pine nuts or sliced almonds
  • Fresh Pea Vinaigrette (see recipe)

Flatbread Dough

  • ½ teaspoon active dry yeast
  • 2 cup bread flour
  • 1 teaspoon sugar

Preparing the Dough

To begin, we prepare the Flatbread Dough. In a food processor, combine flour, sugar, and salt. Gradually add warm water, yeast, and olive oil, pulsing until the dough forms a ball. Knead briefly until smooth, then let it rise until doubled in size. Divide the dough into two portions, shape them into balls, and let them rest before rolling them out into 12-inch circles.

Creating the Topping

The topping for this flatbread is a delightful mixture of leeks, peas, mint, and ricotta.
