Ingredients

  • 2 garlic cloves, thinly sliced
  • 3 leeks, trimmed, halved, and white and green parts thinly sliced (4 1/2 cups)
  • 1 cup fresh shelled peas*
  • 2 tablespoon loosely packed chopped fresh mint
  • ¾ cup whole milk ricotta
  • ¼ cup buttermilk
  • ¼ cup heavy cream
  • ¼ cup finely grated Parmesan cheese
  • 2 8 ounce portions Flatbread Dough (see recipe)
  • 4 ounce fresh mozzarella cheese or 4 ounces feta cheese, crumbled
  • 2 tablespoon pine nuts or sliced almonds
  • Fresh Pea Vinaigrette (see recipe)

Flatbread Dough

  • ½ teaspoon active dry yeast
  • 2 cup bread flour
  • 1 teaspoon sugar

Preparing the Dough

To begin, we prepare the Flatbread Dough. In a food processor, combine flour, sugar, and salt. Gradually add warm water, yeast, and olive oil, pulsing until the dough forms a ball. Knead briefly until smooth, then let it rise until doubled in size. Divide the dough into two portions, shape them into balls, and let them rest before rolling them out into 12-inch circles.

Creating the Topping

The topping for this flatbread is a delightful mixture of leeks, peas, mint, and ricotta. Start by sautéing garlic in olive oil until fragrant, then add sliced leeks, salt, and pepper, cooking until tender. Add peas and mint, cooking briefly until the peas are just tender. In a separate bowl, combine ricotta, buttermilk, cream, Parmesan, salt, and pepper.

Assembling and Baking

Preheat the oven to 450°F and oil two baking sheets. Roll out the dough into circles and transfer them to the baking sheets. Spread the ricotta mixture over the dough, leaving a border around the edges. Top with the pea mixture, mozzarella, and pine nuts. Bake for 15 minutes, rotating the baking sheets halfway through, until the crust is golden and the cheese is melted and browned in places.

Serving Suggestions

Serve the Peas and Leeks Flatbread with a side of Fresh Pea Vinaigrette, made by blending fresh peas, red wine vinegar, olive oil, water, herbs, onion, and salt until smooth. Drizzle the vinaigrette over the flatbread and garnish with additional mint, if desired.

The Peas and Leeks Flatbread is a delightful twist on traditional flatbread, offering a burst of fresh flavors and vibrant colors. Its simple yet elegant preparation makes it a perfect dish for any occasion, from a casual weeknight dinner to a festive gathering.
